1 egg, beaten
2 Tb applesauce or grated fresh apple
1 small fingerling banana or 2" of regular banana, mashed
2 Tb flaxseed meal
1 generous Tb rice or soy protein powder
1/2 tsp vanilla extract
1/4 tsp cinnamon (optional)
2 tsp tapioca flour (optional, for better texture)
1 Tb ground walnuts or almonds (optional, adds good fat and protein)
Mix all ingredients together into a batter. Heat a bit of your favorite cooking oil in a skillet over medium-high heat. Pour half of batter into pan, cook until edges start to dry, flip and cook until golden brown. Repeat for rest of batter. Serve with a bit of real maple syrup, honey, or no-sugar-added fruit preserves.
Alternately, you can make "dollar" pancakes by dropping the batter into the pan a couple of tablespoons at a time.
